CHARDONNAY
The grapes for this wine were harvested before sunrise in the morning. The grapes were selected from a single vineyard planted in a sandy loam soil. The vineyard is situated against the foot of the Du toitskloof mountains in far Western corner of the Goudini region.
This wine spent three months on the lees and was kept in oak for nine months. Malolactic fermentation was allowed to proceed to 70% to add the creamy richness on the palate. This wine is complex with a bouquet of sitrus and peach. The finish is of smooth, robust oak with hints of vanilla and butterscotch.

SAUVIGNON BLANC
The grapes for this wine were harvested very early in the morning. The grapes were selected from a single vineyard which is planted in a stoney loam soil. This vineyard is situated at the far Western edge of the fertile Goudini region, at the foot of the Du toitskloof mountains. The close proximity to the mountains, the rivers that flow from them and the long shadows of the early aftenoon, combine to create a unique cool climate.
This wine has robust up front fruit on the nose with aromas of guavas and gooseberries. It is rich and crisp on the palate with layers of lingering tropical fruit.

SHIRAZ
The grapes for this wine were harvested full ripe from a single vineyard. The vineyard is situated against the foot of the Du Toitskloof mountains and is planted in a sandy loam soil. Irrigation is strictly controlled with the aid of neutron moisture probes so that berry size is kept small.
This wine started and completed it's malolactic fermentation in a combination of French and American oak barrels. It was further matured in these barrels for 18 months.
This Shiraz has a deep opaque ruby colour. The bouquet is complex with a smokey richness and hints of vanilla and black pepper. It is mouth filling with spicy berry fruit, a smooth texture and a long finish.

CAPE HARMONY
This wine is a Cape Blend made up of equal parts of Cabernet Sauvignon, Merlot and Pintage. Each varietal was harvested full ripe from each respective single vineyard. Each varietal was vinfied separately. The wines spent 18 months in a combination of French and American oak barrels. The three components were blended together after they were removed from the barrels.
This blend has a deep purple plum colour. It is complex on the nose with tones of vanilla and dark chocolate. It is also smooth textured and robust with concentrated, ripe berry fruit and black berry jam flavours that linger on the palate.

PINOTAGE ROSÉ
Love of my life
This off-dry rosé has a fresh tropical bouquet with hints of cherries. Enticingly floral and complex on the palate with tones of peaches and honey on the finish. The grapes for this wine were selected from a single vineyard of Pinotage grapes. This vineyard is planted in a sandy loam soil and is situated right up against the foot of the Du Toitskloof Mountains.
Here the morning sun reaches it late and the afternoon shadows reach it early, creating an ideal cool climate. The grapes were harvested at full ripeness and picked early in the morning to ensure that the grapes reach the winery while still cool. After crushing the grapes the juice was left on the skins for five hours to gain colour.
The free run juice was then drawn off the skins and chilled in a tank. The wine was then cold fermented at 13° C so as to maintain the fruity flavours of the grape in the wine. |
